Little Red Riding Hood’s Chili
A kid friendly, great tasting chili recipe that is low in fat and cholesterol. Feel free to use any protein you like.

  • ½ -1 pound ground turkey or lean ground beef
  • 2 (14 ounces) cans of ready-cooked pinto or kidney beans
  • 1 (14 ounces) can tomatoes (whole, diced, or crushed)
  • ½ cup chopped onion
  • 1 cup chopped green pepper
  • 3 cups water or broth/stock
  • 1 teaspoon chili powder
  • salt to taste

  1. In large pot, brown ground turkey and drain off fat.
  2. Add beans, tomatoes, onion, green pepper, stock (or water) and spices to meat. Stir.
  3. Bring mixture to a boil. Reduce heat. Cover and cook over low heat for about 10-15 minutes.
