Little Red Riding Hood’s Chili
A kid friendly, great tasting chili recipe that is low in fat and cholesterol. Feel free to use any protein you like.
Ingredients
- ½ -1 pound ground turkey or lean ground beef
- 2 (14 ounces) cans of ready-cooked pinto or kidney beans
- 1 (14 ounces) can tomatoes (whole, diced, or crushed)
- ½ cup chopped onion
- 1 cup chopped green pepper
- 3 cups water or broth/stock
- 1 teaspoon chili powder
- salt to taste
Directions
- In large pot, brown ground turkey and drain off fat.
- Add beans, tomatoes, onion, green pepper, stock (or water) and spices to meat. Stir.
- Bring mixture to a boil. Reduce heat. Cover and cook over low heat for about 10-15 minutes.
